Abstract

When synthesizing automatic control systems, there is a problem with complex definition of controller parameters, and the main criterion becomes the achievement of stable operation, and the quality of the transient becomes of secondary importance. Such problems may arise in the presence of two or more nested loops in the initial system. The correct synthesis of such systems is possible by using a slave control structure that allows us to replace the inner loop with an equivalent aperiodic link of the first order. By the example of an automatic temperature control system for superheated steam, the principle of building a slave control structure and the synthesis of such a system are shown in the paper.

Abstract

This article is devoted to the study of rheological properties of finished dough semi-finished products for oriental confectionery based on gluten-free raw materials. Rice and corn flour were used as the main raw materials. Foam density was determined as the ratio of a certain foam mass to the volume of the vessel measured with distilled water, foaming ability – as the ratio of the height of the foam column to the height of the column of the solution of prescription components, foam stability – as the ratio of the height of the foam after 3 hours to the original. Organoleptic quality indicators were determined in accordance with GOST R 50228-92. The tasting quality assessment was carried out by a 10-point school. The structural and mechanical properties of the chak-chak samples were studied on the texture analyzer "Structurometer ST-3" by determining the loading force on the indenter when it is inserted into the sample body at a movement speed (insertion) of 1.0 mm/s. As a result of the conducted research, it was concluded that the optimal ratio of rice and corn flour is 1:1, in this ratio, semi-finished products are characterized by high organoleptic and structural-mechanical quality indicators that are not inferior to the control sample of semi-finished products. The use of rice and corn flour in the chakchak technology makes it possible to expand the range of gluten-free oriental flour confectionery products suitable for consumption by people suffering from such a disease as celiac disease.

Abstract

The influence of vegetable additives (pea protein isolate, apple flour, sprouted green buckwheat flour, sprouted oatmeal flour, wheat germ pomace powder) on the acidity of wheat bread dough and wheat-rye bread was studied. As a result of the research, it was found that herbal supplements contribute to the intensification of the vital activity of yeast and acid-forming microflora, this is expressed in a larger volume, better fermentation activity and acidity of the dough, this fact is probably associated with a more favorable nutrient composition of herbal supplements. An increase in the content of vegetable additives in the ingredient composition of bread contributes to an increase in the acidity of the dough compared to control samples. The introduction of apple flour and a mixture of pea protein isolate and apple flour into the bread recipe leads to an increase in initial acidity by an average of 1.5 degrees compared to control samples, while maintaining dynamics during the fermentation process, which is the basis for reducing the duration of the technological cycle. The acidity of the test samples with pea protein isolate and flour from germinated green buckwheat increases by an average of 1 deg. Wheatgrass pomace powder, a mixture of germinated oatmeal flour and germinated green buckwheat flour, germinated oatmeal flour slightly increase the acidity of wheat and wheat-rye bread dough.

Abstract

In this work, we simulated the process of formation of triple complexes of the essential trace element iron with riboflavin and essential amino acids. The simulation was carried out in the QChem software using the IQmol molecular editor. To begin with, the modeling of the molecules of essential amino acids was carried out: L-valine, L-leucine, L-isoleucine, Lmethionine, L-threonine, L-lysine, L-phenylalanine and L-tryptophan. Modeling was carried out by the interaction of the iron atom with various pairs of nitrogen heteroatom and enol oxygen of riboflavin, as well as with the carboxyl group and α-amino group of the amino acid. As a result, it was found that the interaction of the trace element iron with riboflavin and essential amino acids is energetically favorable (∆E > 2575 kcal/mol) and chemically stable (0.075 ≤ η ≤ 0.138 eV). Based on the data obtained, the most probable configuration of the molecular complex was determined - interaction with riboflavin through N5 in the pyrazine ring and enol oxygen attached to the C4 atom in the pyrimidine ring of riboflavin. The molecular system that has the highest difference in total energy (∆E = 2577.501) and chemical hardness (η = 0.138 eV), and therefore the most energetically favorable and chemically stable, is the copper valinatoriboflavinate molecular complex, in which the interaction of iron with riboflavin occurs through N5 in the pyrazine ring and enol oxygen attached to the C4 atom in the pyrimidine ring riboflavin.

Abstract

Analysis of the diet of patients with diabetes mellitus revealed a lack (4-5 g per day) in the consumption of lecithin. Theoretical and practical substantiation of the use of lecithin in food formulations with antidiabetic properties was carried out by computer chemistry methods by determining molecular properties and analyzing the electrostatic potential (EP) surface. It has been established that the molecules involved in the transport of glucose into the cell are electron acceptors. The molecular properties of the insulin receptor, insulin and glucose have been studied. The assessment of the action of lecithin on the insulin receptor was controlled by molecular docking. Based on the results of modeling, it was revealed that the interaction of these chemical compounds does not form strong complex compounds, the energy of the system increases, but insulin with glucose is not transported outside the receptor. It has been proven that the introduction of lecithin into the system promotes an increase in the activation of the system, since the potential energy of the complex increases by 387.3 kcal. To study the possibility of using lecithin as an additive in products subjected to heat treatment, the activation energy was compared with the energy state of the molecule during the action of temperature. With the help of Langevin dynamics and the method of controlling the amount of inorganic phosphorus (calorimetric method) in experimental samples of boiled sausages, the resistance of lecithin to heat treatment was confirmed.

Abstract

This article presents studies of the composition and properties of goat's milk as a raw material for the production of functional food products. The main attention is paid to the analysis of the chemical composition, which includes the content of proteins, fats, carbohydrates, vitamins and trace elements. The protein fraction of goat's milk has lower levels of as1-casein, which lead to the formation of larger casein micelles with more moistened pores, as a result, the allergenic potential of goat's milk decreases, compared with casein micelles of cow's milk. The total content of essential amino acids in goat's milk is even slightly higher than in women's milk, and is (on average) 45% and 39.2% of the total number of amino acids, respectively. The carbohydrate fraction of goat's milk, in addition to the main component – lactose, contains oligosaccharides, the composition of which is close to women's milk. The characteristic "goat" smell is partly due to fatty acids with medium and short chain. They are also important for the ease of digestion and absorption of milk fat, since the efficiency of the lipase enzyme on short chains is higher than on long-chain fatty acids. The size range of fat globules is about 1-10 microns, and the ratio of fat globules less than five microns is more than 80%. As in any milk, goat's milk contains vitamins, the content of most of which B1, B2, B6, D, E is comparable to the level of vitamins in cow's milk, while in goat's milk the concentration of vitamin C is slightly higher. In terms of mineral content, goat's milk is quite comparable to cow's milk in terms of Na, Zn and Fe, but it contains 2 times more Cu, 3 times more Mn, 1.5 times more Mo, which are involved in hematopoiesis, regulate metabolic processes. The number of goat farms is growing in our country, industrial production is gradually developing – this is a new trend in domestic goat breeding, while Russian farmers are actively studying foreign experience in the production and processing of goat milk for fermented dairy products. Based on the data obtained, it is proposed to use goat's milk as the main component in the development of functional food products. It is believed that the use of goat's milk can contribute to improving the health and quality of life of people, especially those who need additional nutrients or have specific dietary needs. However, in order to implement this proposal, additional research is needed to determine the optimal ways to use goat's milk and develop effective functional products based on it.

Abstract

The results of studies of the effect of processing on the antioxidant and antimicrobial properties of honey are of interest to the scientific community, since the parameters and method of processing affect the quality of honey. The purpose of the article is to review scientific studies of the results of the impact of modern processing methods on the antioxidant activity and antibacterial properties of honey. The review includes articles published in English and Russian for the period 2010–2023. In the process of scientific research, the Scopus, Web of Science, PubMed and Elsevier databases and the eLIBRARY electronic library were used. The results of scientific studies have shown that components that affect the antioxidant activity and antimicrobial properties of honey can change during processing, and processed honey may have a low level of antioxidant and antibacterial activity. Heat treatment and microwave treatment of honey adversely affect the antioxidant and antimicrobial activity of honey. Unlike other nonthermal methods, high pressure treatment and gamma irradiation do not affect the antibacterial activity and antioxidant properties of honey. Ultrasonic treatment increases the antioxidant activity of honey. The presented scientific review can be used for further scientific research, as well as by enterprises that collect and process honey in choosing the best processing methods in the production process.

Abstract

The recently observed increase in the carnival political culture primarily affects the behaviour of ruling political elites of the so-called "Collective West". First of all, it is manifested in the penetration of elements of absurdity and political deviation into political practice, which has an impact on the sharp decrease of the quality of professional competence of the elites and their leaders. In the media these "politicians" have long been associated with expressions such as "political clown", "political buffoon", and his team is a kind of "theatre of the absurd", etc., which describe such irresponsible behaviour from an extremely negative point of view.

This study is the first in the scientific literature to systematically address not only the contemporary features of carnival political culture, but also to thoroughly examine its historical roots. It is the first monograph to analyse the essence of political carnival and carnival political culture. It is the analysis of this work that this review is devoted to.

Abstract

This article attempts a comparative analysis of the countries of the South Caucasus using the typology of cultural dimensions of G. Hofstede, and also considers, through this typology, countries that claim leadership in the region, namely Iran, Russia and Turkey. Since the author of the article understands leadership not only as military-political and economic superiority, but also cultural (which is especially important in the context of considering the policy of soft power), it seems necessary to include the above-mentioned countries in the object of analysis. This will allow us to understand the specifics of interethnic relations through the measurement of cultures.

Abstract

Modern Sino-Indian relations are characterized on the one hand by similarity in views on many key issues of world politics and mutual attitude to cooperation, on the other hand, there is an element of competition and disagreement in a number of areas. In general, the geopolitical balance of power in South and Southeast Asia is unstable and largely depends on the relations between such powers as India and China. A certain concern is caused by the fact that in modern conditions, India, having abandoned the long-standing policy of neutrality, has taken a course to build up military power, since China in its foreign policy towards it in some cases, using a military resource, has established control over some disputed border territories of India.

The article analyzes the strategic plans and concrete steps of both India and China to build either China-centric or Indo-centric Asia and provides arguments in favor of China-centric trends in both geopolitical and geo-economic areas.

Abstract

The article examines the actual problem of falsification of political history and its "interpretations" by Anglo-Saxon authors. The authors demonstrate a comprehensive approach of a set of methods – from dialectics and gemeneutics to comparative studies and semiotics. The presented principles of dialectics allow us to identify the dynamics of the development of falsifications. The principles of comparative studies used in comparisons with historical facts help to expose falsification. The use of personalism data allows us to more accurately understand the personalities who participated in the falsification. The method of hermeneutics allows you to penetrate into the depth of the meaning of the text, through the disclosure of its true content, the problem of falsifications is represented by the scheme: incompetence-error-lie. The approaches of the US ruling elite to the interpretation of modern international events of political history in relations with Russia have been criticized. In relation to the English falsifiers of history, the authors distinguish two categories of memory: collective and collective. The nature of information wars in fakes and demagogic tricks is revealed. The purpose of further development of this topic is to develop and implement a number of events and "anti-fake" programs based on close interaction of the Russian media, which allow to rid the Russian community of the "weeds" of the Anglo-Saxon falsification of political history.

Abstract

The article examines the fundamental principles of Indian foreign policy and shows that the main principle is the promotion and realization of their national interests. A large place in the work is occupied by the consideration of the main guidelines of India's foreign policy, where national interests are considered not just as a kind of theoretical concept, but also as a practical model of behavior. The research is conducted through consideration of such problems as maintaining the system of national interests of a given state, where, as in most countries of the world, security occupies a central place. The paper analyzes another characteristic feature of Indian foreign policy – independence. The main attention is drawn to the fact that strong internal prerequisites contribute to the fact that India is slightly exposed to external political influences, which allows it to more confidently promote its national interests in the international arena. India's foreign policy strategy is fully implemented in the context of its national interests and is focused on the implementation of the central tasks facing the political elite of the state. The main goal of the current government's foreign policy strategy is to promote India's economic development and attract foreign investment. The key priority of the current Prime Minister's foreign policy is the implementation of the "Do in India" initiative, which aims at significant growth of the industrial sector, so important for Delhi. Indian ruling circles rely on the position that the differences between the two main centers of power of modernity continue to grow. The Prime Minister believes that India should not be drawn into the struggle between the United States and the People's Republic of China, as this will hinder the realization of the goal of economic development, as well as significantly aggravate the situation in the field of national security. However, Delhi is not ready to narrow economic ties with either side in favor of a third. An important interest for India is the expansion of contacts with priority regional associations (ASEAN, EU, SAARC) and major powers (Russia, Japan, Australia), which, first of all, will help attract additional investments into the country's economy, and also form a comprehensive system of arrangements for insuring its economic and political risks.

Abstract

The study of the rejection of the moral principles of medical workers and scientists, their societies and academic institutions in favor of a murderous ideology raises fundamental concerns and global implications for the education and practice of current and future medical workers. The worst-case scenario in medicine raises deeply disturbing but important questions here and now: could the Holocaust, one of the greatest evils ever committed against humanity, happen without the complicity of doctors, their societies and the scientific professional community? How did healers become murderers? Could it happen again? The political component of the perception and translation of the lessons and consequences of the Holocaust reflects the clash of universal values, concepts, ideological collisions, including the relations of power and society, the individual and the state, political institutions and everyday practices of individual citizens, political elites and party groups. The source database includes a wide range of historical evidence, including memoirs of witnesses of the Holocaust era, reviews of psychiatrists who were experts at the Nuremberg trials, as well as data from surveys of contemporaries about the political lessons of the Holocaust. The methodological base included the whole complex of historical, social and political approaches, taking into account the methods of the history of everyday life, law, and political issues. The terminology on the problems of the Holocaust was clarified through the prism of medical experiments during the Second World War of 1939-1945. A critical understanding of the historiographical and source-based traditions of the study of the topic "The Holocaust and medicine" in both domestic and foreign scientific communities has been carried out. Obvious deformations of the interpretation of the Holocaust have been revealed in a number of works by American researchers. The assessments of the outstanding psychiatrist Yevgeny Konstantinovich Krasnushkin, who represented the expert community at the Nuremberg trial of Nazi war criminals in 1945, were introduced into scientific circulation. The involvement of memoirs of Holocaust survivors and witnesses of Nazi crimes makes it possible to reconstruct and retransmit amazing pages of survival in the era of Nazism and totalitarianism. The use of private historical methods details the reliable and valuable evidence of atrocities and bullying of concentration camp prisoners under the fascist regime reflected in memoirs, preserved records of contemporaries. The modern medical community, including students, residents of medical universities, are very attentive and sensitive to the consequences of this practice of Nazi Germany, but only if they get acquainted with the medical aspects of the Holocaust during their studies. It is concluded that the Nazi racial laws were mastered, and quite successfully justified not only by the luminaries of German medicine, but often by ordinary representatives of the medical community, which often turned doctors into accomplices in criminal activities during the reign of Hitler. It is proved that memorializing the historical memory of the Holocaust tragedy, including through the prism of medical experiments on people, can hinder the development of neo-Nazi views, nationalism and extremism, antiSemitism and xenophobia in modern society. The political aspects of studying the problem of the Holocaust in modern Russia are convincingly detailed, which reflects the urgent sociopsychological, everyday, ethno-confessional needs of the development of the population of the Russian Federation, including civil society and public initiatives for the formation of tolerance, respect for human rights and ethnic integrity, and identity.

Abstract

Two images of the future – «Digital totalitarian world or ―cybertotalitarianism― as ―digital concentration camp― with the Fourth Industrial (limited) revolution, the ―Great Reset― with reducing the population of the Earth from 8 to 2 billion people» and «The development of local civilizations of the fifth generation based on humanism, dialogue, partnership and peace-loving diplomacy between States, peoples, and civilizations, on the basis of constant concern for nature and the noosphere, with the leadership of the East and the Russian multinational civilization», they came together in a fierce battle for primacy on their territory and the planet Earth in the 21st century.

This article focuses on current international agenda about forecasting the image of the future as a collision of models of paintings and strategies of the world order for the near and medium term. Its content in an accessible form shows the global price that humanity will have to pay for the strategy of a unipolar ―Collective West‖ and an ―alternative‖ to a multipolar world based on the principles of transhumanism, the rules of TNCs, total digitalization (according to K. Schwab and other). Peace, diplomacy, state sovereignty, reliable cooperation, safe work, and the identity of peoples, the continuity of classical values and universal concern for nature are designed to overcome power transhumanism and the Western ultra-liberal model of human development. Economic diplomacy is seen as a tool for harmonizing international life.

Abstract

The correct definition of the methodological basis of the study is a prerequisite for its success. The methods of cognition are determined by the object that is selected in the framework of the study. The article pays attention to the issues of determining the method of studying the activities of political parties, which should be understood as a process in which the result is the achievement of goals. In turn, the activities of political parties are realized through the performance of certain functions. The list of functions of political parties can be formulated on the basis of an analysis of the current legislation regulating relations in this area, as well as by identifying the features of the activities of political parties through the prism of political science. The following functions of political parties should be recognized as the most important: ideological, which is expressed in the formation of the political will of the population; articulatory, associated with the expression of the formed political will by fixing it in the party program, sending appeals to state bodies, public organizations, etc.; political, aimed at participating in elections, referendums, etc.; representative, which they are implemented by representing and ensuring compliance with the interests of the electorate in interaction with various institutions of the state. The methodology of scientific research on the activities of political parties should be based on the integrated application of methods of various branches of science. First of all, the methods of political science and legal sciences should be noted. The study of political parties from the point of view of the approaches of political sciences will allow analyzing the concepts of the emergence of political parties, the peculiarities of their functioning in the social and political conditions of various states, as well as other aspects of the activity of this phenomenon of socio-political life. However, the analysis of the functioning of political parties cannot be carried out only within the framework of political sciences, the legal aspects of their activities are also essential. Within the framework of research on the activities of political parties, the political and legal method is one of the basic ones that allows analyzing not only the evaluation criteria of the activities of political parties, but also determining the impact of existing legal norms on the activities of a political party and its practical implementation. Among the legal methods of research, first of all, we apply the comparative legal method, which allows us to analyze the features of the activities of political parties in various historical periods. The application of the comparative legal method is of particular relevance, taking into account the experience of our state in regulating the interaction of the state with political parties, primarily during the existence of the USSR. For the completeness of the analysis of the activities of political parties, it is also necessary to use psychological methods that will reveal the characteristics of the behavior of leaders and their influence on the popularity of a political party, the level of public confidence. Evaluation of the effectiveness of a political party's activities should also be carried out through an analysis of its goals and objectives, their compliance with the objective needs of society, as well as by identifying the level of trust of the electorate in a particular political force.Achieving these tasks is possible through the use of sociological methods, such as statistical method, method of collecting and analyzing information, interviewing. These methods will reveal the attitude of the public towards a political party, its program, put forward tactical installations, etc. Сonclusion, it is concluded that there is a fairly wide list of methods for studying the detail of political parties, while methods of various levels and industry affiliation are applicable. However, it is noted that the application, first of all, of the political and legal method is justified.

Abstract

The author's work proposes an exclusive approach to solving the problems of optimizing agricultural production. It is based on the developed model for optimizing the production of differentiated crop production and its distribution. The purpose of this study is to assess the impact of the structure of crop production on the economy of the agro-industrial complex of the Astrakhan region on improving the financial and economic results of agricultural production activities. As a working hypothesis, the economic definition of agricultural land was used, according to which they are not only a means of production but also an object of labour. The existing models for the production of differentiated agricultural products by agricultural entities operating in a competitive but poorly institutionalized market environment do not allow for the optimization of agricultural production and the proper efficiency of the agro-industrial complex.

Abstract

New technical solutions are presented in the form of elements of the Argo and Margot constructors, the prototype of which was the element of the Lego constructor. The distinctive essence between them is the replacement of cylindrical spikes with spikes having the shape of truncated cones of a round and cruciform profile with placement on the diaphragm in the middle of the height of the elements.

For the serial production of new elements, 3D printing technology was used, which significantly increased their technical and economic characteristics, as well as maintained full compatibility with the prototype. A project is presented to refine elements into a device for training sensorymotor functions in children with disabilities.
