In this situation, improving the quality and safety of food products is one of the most important and priority tasks. In the microbiological safety of food had new priorities, which are associated with the rapid change of epidemiology of infectious diseases: emerging pathogens with elevated aggression and altered biological properties. Therefore, it is particularly important microbiological aspects of food industry technology. The result of the research was to develop sustainable consortium of beneficial symbiotic microorganisms taken from the wild environment, with creation on this basis the line of probiotic products for food, feed and bio-cenotic purposes that obespechil comprehensive system biology-friendliness of raw materials and products of animal origin.
