Analysis of the kinetics of water loss in pectin-based polymer films to evaluate their sorption properties

Abstract
Pectin-based biopolymer films have attracted considerable interest due to their potential as an environmentally friendly alternative to traditional petroleum-derived plastics. The paper describes the determination of the sorption parameters of film materials based on the study of kinetic patterns of moisture removal from them and provides recommendations on the prospects for research and implementation of original biodegradable polymer materials for food packaging. Infrared drying is one of the effective methods for removing moisture from polymer films used in the food and packaging industries; it ensures rapid and uniform drying of materials with minimal energy consumption.
