THERMODYNAMIC ANALYSIS OF THE MECHANISM OF INULIN INTERACTION WITH WATER

Abstract

Isotherms of sorption of inulin at different temperatures are obtained; the energy input for the removal of moisture is calculated. Humidity and temperature dependences of free and bound energy on inulin sorption are obtained. Numerical values are calculated and functional humidity and temperature dependences of the thermogradient mass transfer coefficient are obtained.
