Исследование показывает эффективность комплексообразования в отношении молочного сырья различной жирности с применением гель-хитозана.</p></abstract><trans-abstract xml:lang="en"><p>The process of coacervation of proteins, lipids, milk solids with aminopolysaccharid chitosan was studied.
