От свежего и фруктового вкуса до разнообразных оттенков и ароматов, сидр предлагает широкий спектр вкусовых качеств. Сидр также имеет длительную историю, и его производство и употребление связано с множеством традиций и обычаев. Благодаря своей уникальности и разнообразию, сидр продолжает привлекать внимание людей со всего мира, делая его неотъемлемой частью культурного наследия и наслаждения алкогольных напитков. По данным международной ассоциации сидра и фруктовых вин Россия занимает 9 место по темпу увеличения объема производства сидра за 2022 г., который составил 8,3 % [<xref ref-type="bibr" rid="cit5">5</xref>]... С точки зрения производителя изготовление сидра является одним из самых перспективных направлений развития рынка алкогольной продукции, так как спрос на напиток стабильно растет, а количество заводов-производителей с отлаженной технологией невелико. Важным преимуществом технологической линии производства сидра яблочного является возможность при незначительных изменениях в технологической схеме переключиться [<xref ref-type="bibr" rid="cit3">3</xref>]… на выпуск другой продукции либо ее усовершенствовать [<xref ref-type="bibr" rid="cit15">15</xref>]. Целью исследования является разработка мероприятий по модернизации технологической линии производства сидра яблочного с улучшенными качественными показателями. Для проведения данного исследования использовали стандартные методики, предусмотренные ГОСТ [1, 2]. Результаты исследования позволили сделать следующие выводы: 1. Определены оптимальные соотношения в рецептурных композициях ароматоопределяющих, фоновых и ароматостабилизирующих компонентов в виде измельченного сухого или свежего пряно-ароматического сырья, получен стойкий специфический аромат и вкус напитка, внесение пряно-ароматической добавки в бродильную смесь привело к лучшему накоплению углекислоты, игристые и пенистые свойства, стабильность повысились на 15-25%, снизились окислительные процессы готового продукта. 2. Усовершенствована технология, аппаратурно-технологическая схема производства сидра за счет установки чана купажного и глубинного фильтр-картона, которые позволят сохранить качественные показатели напитка. Все это позволило нам сделать вывод о важности исследования. Модернизация технологической линии производства сидра яблочного с улучшенными качественными показателями при использовании пряно-ароматической добавки и замены фильтр-картона увеличивается прибыль от реализации продукции. При незначительном повышении себестоимости продукции (0,15%) удалось достигнуть экономического эффекта в 2,75 млн.руб. Данное исследование позволяет сделать вывод о том, что предложенная модернизация производства технологической линии является экономически целесообразной, разработанная рецептура расширит товарный ассортимент сидра яблочного, сохраняя высокие качественные показатели продукта.</p></abstract><trans-abstract xml:lang="en"><p>In many countries, especially in Europe, cider is a popular choice for those looking for variety in the world of alcoholic beverages. From fresh and fruity flavors to a variety of shades and flavors, cider offers a wide range of flavors. Cider also has a long history, and its production and consumption are associated with many traditions and customs. Due to its uniqueness and diversity, cider continues to attract the attention of people from all over the world, making it an integral part of the cultural heritage and enjoyment of alcoholic beverages. ...According to the international Association of cider and fruit wines, Russia ranks 9th in terms of the rate of increase in cider production in 2022, which amounted to 8.3% [<xref ref-type="bibr" rid="cit5">5</xref>]. The purpose of the study is to develop measures to modernize the technological production line of apple cider with improved quality indicators. To conduct this study, standard methods provided for in GOST [1, 2] were used. The results of the study allowed us to draw the following conclusions: 1. The optimal ratios in the formulation compositions of aroma-determining, background and aroma-stabilizing components in the form of crushed dry or fresh spicy-aromatic raw materials were determined, a stable specific aroma and taste of the drink was obtained, the introduction of a spicyaromatic additive into the fermentation mixture led to a better accumulation of carbon dioxide, sparkling and foamy properties, stability increased by 15-25%, oxidative the processes of the finished product. 2. The technology, hardware and technological scheme of cider production has been improved by installing a vat of blended and deep filter cardboard, which will preserve the quality of the drink. All this allowed us to conclude the importance of the study. Modernization of the technological line for the production of apple cider with improved quality indicators when using a spicy-aromatic additive and replacing filter paper, the profit from the sale of products increases. With a slight increase in the cost of production (0.15%), it was possible to achieve an economic effect of 2.75 million rubles.
