Они насыщают организм витаминами, минеральными веществами, пищевыми волокнами и т.п. Кроме того некоторые овощи содержат антиоксидантные вещества, которые защищают организм человека от воздействия свободных радикалов, повышают тем самым иммунитет, способствуют стойкости организма к влиянию негативных факторов внешней среды. Но несмотря на это использование их в пищевой промышленности ограничено. В связи с этим перспективным направлением является использование овощных пюре в производстве кондитерских изделий.</p></abstract><trans-abstract xml:lang="en"><p>Vegetables play an important role in the human diet. They saturate the body with vitamins, minerals, dietary fibers, etc. in Addition, some vegetables contain antioxidant substances that protect the human body from the effects offree radicals, thereby increasing immunity, contribute to the body's resistance to the influence of negative environmental factors. But despite this, their use in the food industry is limited.
